Nonna Regina : Our Story


At Nonna Regina, Valentin Gorbalan conjures up heavenly pasta dishes, where excellent ingredients and good craftsmanship merge into a higher unity. The mission is not to reinvent Italian cuisine, but to cook its classics to absolute perfection.
Valentin is a trained chef from Argentina with a strong connection to his Italian grandmother's cooking - so much so that Nonna Regina is named after her.
Before he started working magic with the pasta machine at Seaside, he worked at a string of restaurants in South America, Europe and Dubai – including one that can be found in the Michelin guide.
However, it's not all about home-made pasta at Nonna Regina, where Valentin also bakes airy and beautifully oiled foccacia bread and carves carefully selected formaggi and salumi.
Only the best ingredients and the greatest delicacies from Støvlelandet find their way to Valentin's kitchen, where the menu is adapted to the season.
